Why not have breakfast for dinner on meatless mondays? This is one of our favorite recipes adapted from a local juicery. I call it ” Yummy Quinoa Breakfast Bowl “. Add any fruit on top.  It’s chopped full of protein and healthy antioxidants for healing. One important healing ingredient is the Ceylon cinnamon. Use only  Ceylon cinnamon, true cinnamon, almost exclusively found in health food stores. Ceylon cinnamon has anti-inflammatory properties, helping to treat certain types of pain. It actually has many other health promoting factors, google it.

“Yummy Quinoa Breakfast Bowl”


quinoa 1 cup

gluten free granola- 1/2 cup

honey –  1 table spoon

Ceylon cinnamon 1 tablespoon

strawberries, blueberries, blackberries or any fruit as your topping

Cook Quinoa as described on package. Don’t forget to rinse Quinoa before cooking. Allow to cool for 5 minutes. Mix with granola. Add in Ceylon cinnamon and honey. Mix all together. Chop up fruit and add to the top of your bowl. Dig in! It’s that easy!
