Why not have breakfast for dinner on meatless Mondays? This is one of our favorite recipes adapted from a local juicery. I call it ” Yummy Quinoa Breakfast Bowl “. Add any fruit on top. It’s chopped full of protein and healthy antioxidants for healing. One important healing ingredient is the Ceylon cinnamon. Use only Ceylon cinnamon, true cinnamon, almost exclusively found in health food stores. Ceylon cinnamon has anti-inflammatory properties, helping to treat certain types of pain. It actually has many other health promoting factors, google it.
Rinse Quinoa in sink before cooking.
Cook Quinoa according to package
Allow to cool for 5 minutes
Mix in granola, ceylon cinnamon, and honey
Chop up fruit and add to bowl
