This easy green lentil soup recipe can be made thick and chunky like a stew or more brothy like a soup depending on how much liquid you use. To make it thicker, reduce the amount of liquid to 4 cups of vegetable broth and 2 cups water.

Step 2 –Add the veggie broth and the water and bring to a boil. Stir in the lentils, then cover, lower the heat to simmer and cook for 30 minutes, stirring occasionally.
Step 3 – Add the remaining 1 teaspoon of kosher salt, the squash and the garbanzo beans and cook until the squash is tender, about 10 minutes. Adjust the seasoning and stir in the lemon juice and the leafy greens. Serve with additional lemon if desired.
