Ingredients

1 tbs grape seed oil- I only use this oil for health benefits

1 onion

minced garlic – 1 tsp

1 can fire roasted diced tomatoes

4 cups of tomatoes – fresh from the garden or two (14.5) cans

2 cup cooked quinoa

1 cup water

1 jalapeño pepper- no seeds

2 tablespoon chili powder

2 tsp cumin

1 tsp unsweetened cocoa powder

2 limes

3 cans of beans- mixed , pinto , black beans , kidney ( any mix of beans you like)

Instructions: Heat oil in large pot. Add in onion and garlic. Sauté til translucent. Add in tomatoes. If using fresh tomatoes, add tomatoes to boiling water for 5 seconds, peel outer covering of tomatoes and dice. Add cooked quinoa, water, diced jalapeño , all spices, juice of both limes. Season with salt and pepper. Cover pot and simmer for 30 minutes. Add in all beans. Cook until done.
