Sharing Plant Based Thanksgiving Recipes
We will add these recipes to our table this year. ( I will add a new one at least each week til Thanksgiving day) I promised the kids not to have only vegan plant based options.( sorry Mr. Turkey) However, there will be plenty of options to select from this turkey day.
We all have that family member that may not realize that healthy and plant based can taste really good. Try a few of these, or just one, and be the Encourager in your family this holiday season.
Apple, Fennel, Sprout Salad.
A nice refreshing light side dish for your turkey day. Apple season is a family favorite and every year I make an apple fennel dish. This year I roasted the fennel and added in sliced Brussel sprouts. It was highly approved and will be added to the menu for that special day.
Recipe is as follows:
Slice four apples, any variety but using local and in season is ideal.
Slice fennel in to 1 in pieces, roast in oven for 15 minutes at 400 degrees.
1tsp of oil to fennel for roasting and cook on parchment paper.
Slice Brussel sprouts in half and slice in 1 in pieces to look shredded.
Toss all together.
Add 1 tbl of cold press flax seed oil
3 tbl spoons of apple cider vinegar
1tsp of Dijon mustard
1 tsp honey
and salt and pepper to taste.
Mix together and add to you salad. Delicious!
